30-Minute Lemon Garlic Shrimp and Rice

1 pound (450g) large shrimp, peeled and deveined

1 cup jasmine rice

2 cups chicken or vegetable broth

3 tablespoons olive oil, divided

4 cloves garlic, minced

1 lemon, zested and juiced

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Rice: In a medium saucepan, bring the chicken or vegetable broth to a boil. Add the jasmine rice, cover, and reduce heat to low. Simmer for about 15 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit for 5 minutes. Fluff with a fork before serving.

    Prepare the Shrimp: While the rice is cooking, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant.

      Sauté the Shrimp: Add the shrimp to the skillet in a single layer. Season with salt and pepper, and cook for about 2-3 minutes on each side until they turn pink and opaque.

        Add Flavor: Once the shrimp are cooked, reduce the heat to medium. Add the lemon zest, lemon juice, and cherry tomatoes to the skillet. Stir gently to combine and allow the tomatoes to soften slightly, about 2-3 minutes.
