Ingredients

For the Cake:

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

2 cups peeled and diced apples (preferably Granny Smith)

For the Streusel Topping:

1/2 cup all-purpose flour

1/2 cup rolled oats

1/3 cup brown sugar, packed

1 teaspoon ground cinnamon

1/4 cup unsalted butter, melted

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.

Mix the Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

Cream Butter and Sugars: In another bowl, using a hand mixer or stand mixer, beat the softened butter, granulated sugar, and brown sugar together until pale and fluffy (about 2-3 minutes).

Add Eggs and Vanilla: Beat in the eggs, one at a time, mixing well after each addition. Add the vanilla extract and mix until combined.

Incorporate Dry Ingredients: Gradually add the dry flour mixture to the butter mixture, alternating with the buttermilk. Start and end with the flour mixture, mixing until just combined.

Fold in Apples: Gently fold in the diced apples, ensuring they are evenly distributed in the batter.

Make the Streusel Topping: In a separate bowl, combine all the streusel ingredients - flour, oats, brown sugar, and cinnamon - then pour in the melted butter. Mix with a fork until the mixture resembles coarse crumbs.

Assemble the Cake: Pour half of the cake batter into the prepared loaf pan. Sprinkle half of the streusel topping over the batter. Add the remaining cake batter and top with the remaining streusel.

Bake: Place the loaf in the preheated oven and bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve: Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.

Enjoy: Serve your Apple Cinnamon Streusel Loaf Cake warm or at room temperature. This delicious cake pairs wonderfully with a cup of coffee or tea!
