4 large eggs

1 ripe avocado, sliced

1 cup fresh spinach, chopped

1 small tomato, diced

½ cup shredded cheese (cheddar or your choice)

4 whole wheat tortillas

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon garlic powder (optional)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Eggs: In a medium bowl, whisk the eggs with a pinch of salt, pepper, and garlic powder (if using). Set aside.

    Cook the Eggs: Heat olive oil in a non-stick pan over medium heat. Pour in the egg mixture and cook, stirring gently, until the eggs are scrambled and just set but still soft, about 3-4 minutes. Remove from heat.

      Warm the Tortillas: In another skillet (or microwave), warm the whole wheat tortillas for about 30 seconds until pliable. This will make them easier to roll.

        Assemble the Wraps: On each tortilla, layer a spoonful of scrambled eggs, followed by sliced avocado, chopped spinach, diced tomatoes, and a sprinkle of shredded cheese.

          Roll the Wraps: Fold in the sides of the tortilla and then roll it tightly from the bottom up to create a wrap. You can secure it with a toothpick if needed.
