Ingredients

4 boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 jar (24 oz) marinara sauce

1 1/2 cups shredded mozzarella cheese

Fresh basil leaves, for garnish (optional)

Olive oil spray or 2 tablespoons olive oil

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it with cooking spray or olive oil.

Prepare the Breading Station: Set up three shallow dishes:

      - In the first dish, place the flour.

        - In the second dish, beat the eggs until smooth.

          - In the third dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, oregano, salt, and black pepper.

Coat the Chicken: Dip each chicken breast first into the flour to coat evenly, shaking off the excess. Then, immerse it in the beaten eggs, allowing any excess to drip off. Finally, press the chicken into the breadcrumb mixture, ensuring it is fully coated. Place the coated chicken breasts on the prepared baking sheet.

Drizzle or Spray: Lightly drizzle or spray the tops of the breaded chicken with olive oil. This helps to achieve a golden, crispy texture.

Bake the Chicken: Bake in the preheated oven for about 20 minutes or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).

Add the Sauce and Cheese: Remove the chicken from the oven. Spoon marinara sauce generously over each breast, then sprinkle shredded mozzarella cheese on top.

Final Bake: Return the chicken to the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

Serve: Once done, remove from the oven and let it rest for a few minutes. Garnish with fresh basil leaves, if desired. Serve hot with a side of pasta or a fresh green salad.
