Cheesy BBQ Chicken Stuffed Peppers

4 large bell peppers (any color)

2 cups cooked chicken, shredded or diced

1 cup BBQ sauce (your favorite brand)

1 cup corn (canned, frozen, or roasted)

1 cup black beans, drained and rinsed

1 cup cooked rice (white or brown)

1½ cups shredded cheese (cheddar or a blend)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro or green onions, for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Peppers: Wash the bell peppers and slice the tops off. Remove the seeds and membranes inside. If needed, you can trim the bottom slightly to make them stand upright.

      Make the Filling: In a large bowl, combine the cooked chicken, BBQ sauce, corn, black beans, cooked rice, garlic powder, onion powder, smoked paprika, and half of the shredded cheese. Season with salt and pepper to taste. Mix until all ingredients are well incorporated.

        Stuff the Peppers: Generously spoon the BBQ chicken mixture into each hollowed-out bell pepper, packing it firmly.

          Top with Cheese: Place the stuffed peppers in a baking dish. Sprinkle the remaining shredded cheese evenly over the top of each stuffed pepper.

            Bake the Peppers: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the peppers are tender.

              Garnish and Serve: Once done, take the dish out of the oven and let it cool for a few minutes. Garnish with chopped cilantro or green onions if desired and serve warm.
