Cheesy Beef and Quinoa Casserole

1 lb ground beef

1 cup quinoa, rinsed

2 cups beef broth

1 cup diced tomatoes (canned or fresh)

1 cup shredded cheddar cheese (plus extra for topping)

1 medium onion, diced

2 cloves garlic, minced

1 cup bell peppers, diced (any color)

1 tsp dried oregano

1 tsp chili powder

½ tsp paprika

Salt and pepper to taste

1 cup corn (fresh or frozen)

2 tbsp olive oil

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and beef broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes or until the quinoa is fluffy and the liquid has absorbed.

      Brown the Beef: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and minced garlic; sauté until the onion is translucent (about 3-4 minutes).

        Add Ground Beef: Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat.

          Mix in Veggies: Stir in the diced bell peppers, corn, diced tomatoes, oregano, chili powder, paprika, salt, and pepper into the beef mixture. Cook for another 3-4 minutes until the peppers are tender.

            Combine Ingredients: In a large mixing bowl, combine the cooked quinoa, beef mixture, and 1 cup of shredded cheddar cheese. Mix well until all ingredients are evenly combined.

              Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch baking dish. Spread evenly.

                Add Cheese Topping: Sprinkle additional shredded cheddar cheese on top of the casserole.

                  Bake: Cover with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese on top is bubbly and golden.

                    Serve: Remove from the oven and let it cool for a few minutes before serving. Enjoy your cheesy, hearty casserole!
