1 pound ground turkey

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 egg, beaten

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

For the Skillet:

2 tablespoons olive oil

1 small onion, diced

2 cups fresh spinach, washed and roughly chopped

1 can (14 oz) diced tomatoes, undrained

1 teaspoon red pepper flakes (optional)

1 cup shredded mozzarella cheese

Fresh basil for garnish (optional)

Prepare the Meatballs: In a large bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, parsley, beaten egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix until just combined; avoid overmixing. Form into 1-inch meatballs and set aside.

    Brown the Meatballs: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once heated, add the meatballs in a single layer (you may need to do this in batches) and cook for about 6-8 minutes, turning occasionally until browned on all sides. Remove and set them aside.

      Sauté Onions and Spinach: In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced onion for about 3-4 minutes until translucent. Add the chopped spinach and cook until wilted.
