Ingredients

For the Meatballs:

1 pound ground turkey

1/2 cup breadcrumbs (preferably Italian)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon Italian seasoning

1 egg, beaten

Salt and pepper to taste

For the Sauce:

1 cup marinara sauce (store-bought or homemade)

1/2 teaspoon red pepper flakes (optional, for heat)

For the Sandwiches:

4 sub rolls or hoagie buns

1 cup shredded mozzarella cheese

Fresh basil leaves (for garnish)

Olive oil (for drizzling)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Make the Meatballs: In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, parsley, garlic powder, onion powder, Italian seasoning, beaten egg, salt, and pepper. Mix until just combined, being careful not to overmix.

Shape the Meatballs: Using your hands, shape the mixture into meatballs, about 1 inch in diameter. Place them on the prepared baking sheet, spacing them evenly.

Bake the Meatballs: Bake in the preheated oven for 20-25 minutes, or until they are cooked through and golden brown on the outside.

Heat the Sauce: While the meatballs are baking, simmer the marinara sauce in a saucepan over low heat. If you’d like some heat, add red pepper flakes to the sauce.

Prepare the Sandwich Rolls: Slice the sub rolls in half lengthwise. If desired, lightly brush the insides with olive oil and bake them in the oven for about 5-7 minutes until lightly toasted.

Assemble the Sandwiches: Once the meatballs are done, remove them from the oven and carefully place 3-4 meatballs on each toasted sub roll. Spoon a generous amount of marinara sauce over the meatballs.

Add Cheese: Sprinkle shredded mozzarella generously over the top of the sauce-covered meatballs.

Melt the Cheese: Return the loaded sandwiches to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Remove the sandwiches from the oven. Add fresh basil leaves on top for a burst of flavor. Serve immediately while warm and gooey!
