Classic Beef & Bean Burritos

1 lb ground beef

1 can (15 oz) black beans, rinsed and drained

1 small onion, diced

2 cloves garlic, minced

1 tsp cumin powder

1 tsp chili powder

1 tsp smoked paprika

½ tsp salt

½ tsp black pepper

1 cup cooked rice (white or brown)

1 cup shredded cheddar cheese

4 large flour tortillas

½ cup salsa (store-bought or homemade)

Fresh cilantro, chopped (optional, for garnish)

Sour cream (optional, for serving)

Instructions
 

Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula. Drain any excess grease.

    Sauté Onion and Garlic: To the skillet with the beef, add the diced onion. Sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Season the Mixture: Stir in the cumin, chili powder, smoked paprika, salt, and black pepper. Cook for another minute, allowing the spices to fully combine with the meat mixture.

        Add Beans and Rice: Gently fold in the black beans and cooked rice, mixing everything together thoroughly. Remove from heat and let it cool slightly.

          Prepare the Tortillas: Warm the flour tortillas on a skillet for about 10-15 seconds on each side, or until pliable. This will make them easier to roll.

            Assemble the Burritos: Lay a tortilla flat and spoon about ¼ of the beef and bean mixture down the center. Top with cheese and a couple of tablespoons of salsa. Fold in the sides and then roll from the bottom up, securing the filling inside.

              Toast the Burritos (optional): In the same skillet, you can lightly toast the burritos seam-side down for a few minutes on each side until golden brown and crispy. This step is optional but adds a delightful texture.

                Serve: Slice the burritos in half and serve hot, garnished with fresh cilantro if desired. Top with additional salsa and sour cream on the side.
