Classic Chicken Fried Rice

2 cups cooked jasmine rice (preferably cold)

1 lb boneless, skinless chicken breast, diced

2 tablespoons vegetable oil

2 large eggs, beaten

1 cup mixed vegetables (peas, carrots, corn)

4 green onions, sliced (white and green parts separated)

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil (optional)

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Prep the Chicken: In a medium bowl, season the diced chicken breast with salt and pepper. Let it marinate for about 10 minutes to absorb flavors.

    Cook the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the chicken and stir-fry for about 6-7 minutes, or until cooked through and slightly golden. Remove the chicken from the pan and set aside.

      Scramble the Eggs: In the same skillet, add the beaten eggs. Stir them quickly until they are scrambled and just set. Remove from the pan and set with the chicken.

        Sauté Garlic and Vegetables: Add the remaining tablespoon of oil to the skillet. Once hot, add the minced garlic and the white parts of the green onions. Stir-fry for about 30 seconds until fragrant. Then, add the mixed vegetables and cook for an additional 2-3 minutes until they are tender.

          Combine Ingredients: Add the cooked rice to the skillet, breaking up any clumps. Stir well to combine with the vegetables. Then, add the cooked chicken and scrambled eggs back to the pan.

            Season the Rice: Pour in the soy sauce and oyster sauce (if using). Stir everything together, ensuring even seasoning throughout. Drizzle with sesame oil for added flavor, adjusting to taste. Cook for another 2-3 minutes until heated through.

              Finish Up: Stir in the green parts of the green onions for freshness. Taste and adjust seasoning with salt and pepper if needed.
