Ingredients

1 baguette, sliced into 1/2-inch rounds

1 cup fresh cranberries

2 medium apples, diced (Granny Smith or Honeycrisp work best)

1 cup Brie cheese, cut into thin slices

1/4 cup honey

1 tablespoon lemon juice

1 teaspoon fresh rosemary, finely chopped

1/2 teaspoon cinnamon

Olive oil, for brushing

Salt and pepper, to taste

Fresh sprigs of rosemary, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Crostini: Arrange the baguette slices on a baking sheet. Brush each slice lightly with olive oil on both sides. Bake in the preheated oven for 10-12 minutes, or until golden brown and crisp.

Cook the Cranberry Apple Mixture: In a medium saucepan over medium heat, combine the cranberries, diced apples, honey, lemon juice, fresh rosemary, and cinnamon. Cook for about 8-10 minutes, stirring occasionally, until the cranberries begin to burst and the apples soften. Add a pinch of salt and pepper to taste, then remove from heat and let cool slightly.

Assemble the Crostini: Place a slice of Brie cheese on each toasted baguette round. Top with a generous spoonful of the cranberry apple mixture.

Final Bake: Return the assembled crostini to the oven and bake for an additional 5 minutes, just until the Brie starts to melt.

Serve: Remove from the oven, let them cool for a minute, then garnish with fresh rosemary sprigs if desired. Serve warm and enjoy the delightful combination of flavors!
