12 ounces pasta (fusilli or penne)

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

3 cloves garlic, minced

1 medium onion, chopped

5 ounces fresh spinach leaves

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (adjust to taste)

1 cup heavy cream

1 cup chicken broth

½ cup grated Parmesan cheese

Salt and black pepper to taste

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook until al dente according to package instructions. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken breasts, seasoning with salt and black pepper. Cook for 5-7 minutes, until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the chopped onion and sauté for 2-3 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Add Spinach and Tomatoes: Toss in the fresh spinach leaves and cherry tomatoes. Cook until the spinach wilts down, about 3 minutes.

          Create the Sauce: Lower the heat and pour in the chicken broth and heavy cream. Stir in the Italian seasoning and red pepper flakes. Bring the mixture to a gentle simmer.

            Combine Ingredients: Add the reserved chicken back into the skillet along with the cooked pasta. If the sauce is too thick, gradually stir in some of the reserved pasta water until you reach your desired creaminess.
