4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, diced

3 cups fresh spinach, washed and chopped

1 cup chicken broth (low-sodium)

1 cup heavy cream

1 teaspoon Italian seasoning

½ teaspoon paprika

1 cup shredded Parmesan cheese

½ cup sun-dried tomatoes, chopped (optional)

Fresh basil, for garnish (optional)

Instructions
 

Season the Chicken: Start by patting the chicken breasts dry with paper towels. Season both sides with salt and pepper.

    Sear the Chicken: In a large skillet over medium heat, add olive oil. Once heated, add the chicken breasts and sear for about 6-7 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F). Remove chicken from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, reduce the heat to medium-low. Add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for another minute, until fragrant.

        Add the Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes.

          Create the Sauce: Pour the chicken broth into the skillet, stirring to combine all ingredients. Bring to a gentle simmer, then add the heavy cream, Italian seasoning, paprika, and sun-dried tomatoes (if using). Simmer for about 3-5 minutes, allowing the sauce to thicken slightly.

            Incorporate Cheese: Gradually add the shredded Parmesan cheese, stirring until melted and the sauce is creamy. Taste and adjust seasoning with additional salt and pepper if necessary.

              Combine & Serve: Return the seared chicken to the skillet, nestling them into the creamy sauce. Allow the chicken to heat through for an additional 2-3 minutes.
