1 cup wild rice blend (uncooked)

1 lb boneless, skinless chicken breasts, diced

1 medium onion, diced

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

8 cups chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon onion powder

Salt and pepper to taste

2 tablespoons olive oil

2 tablespoons butter

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the rice: In a medium pot, combine the wild rice blend with 4 cups of water. Bring to a boil, then reduce heat, cover, and simmer for 40-50 minutes until tender. Drain any excess water and set aside.

    Sauté the vegetables: In a large soup pot, heat the olive oil and butter over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened. Stir in the minced garlic and cook for another minute.

      Cook the chicken: Add the diced chicken to the pot. Season with salt, pepper, thyme, rosemary, and onion powder. Cook until the chicken is no longer pink, about 5-7 minutes.

        Add broth: Pour in the chicken broth and bring the soup to a boil. Reduce the heat to a simmer and let it cook for about 10 minutes, allowing the flavors to meld.

          Combine with rice: Stir in the cooked wild rice, mixing well to combine. Let the soup simmer for an additional 5 minutes.

            Make it creamy: Remove the pot from heat and stir in the heavy cream. Taste and adjust seasoning if necessary.

              Serve: Ladle the soup into bowls, garnishing with freshly chopped parsley for an added touch of freshness.
