Ingredients

8 oz penne pasta

1 lb boneless, skinless chicken breasts, cubed

2 tbsp olive oil

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, drained

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup fresh basil leaves, chopped

1 tsp Italian seasoning

Salt and pepper, to taste

Red pepper flakes (optional, for heat)

Fresh basil leaves, for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the cubed chicken breasts, season with salt, pepper, and Italian seasoning. Sauté for about 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the drained diced tomatoes and cook for an additional 2-3 minutes, allowing them to soften.

Make it Creamy: Lower the heat to medium-low and pour in the heavy cream, stirring well to combine. Gently bring it to a simmer, then add the grated Parmesan cheese, stirring until melted and the sauce is creamy.

Combine: Add the cooked chicken and chopped fresh basil into the sauce. Stir well to coat the chicken evenly in the creamy tomato sauce.

Mix in the Pasta: Add the cooked penne pasta to the skillet, tossing it together with the sauce and chicken until everything is well combined. If the sauce is too thick, add a splash of pasta water to reach your desired consistency.

Taste and Adjust: Season with additional salt, pepper, and red pepper flakes (if using) to taste. Mix well.

Serve: Plate the creamy tomato basil chicken pasta, garnishing with extra fresh basil leaves and a sprinkle of Parmesan cheese if desired.
