2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

1 cup shredded cheddar cheese

¼ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Begin by rinsing and peeling the sweet potatoes. Slice them into wedges approximately ½ inch thick.

    In a sizeable mixing bowl, combine the sweet potato wedges with olive oil, garlic powder, paprika, salt, and black pepper, tossing until they are thoroughly coated.

      Preheat your air fryer to 400°F (200°C) for around 5 minutes.

        Arrange the seasoned sweet potato wedges in a single layer within the air fryer basket. You may need to do this in multiple batches to prevent overcrowding.

          Air fry the wedges for 15-18 minutes, shaking the basket halfway through to guarantee even crisping.

            Once the sweet potatoes achieve a golden and crispy appearance, sprinkle the shredded cheddar cheese and grated Parmesan cheese uniformly over the wedges.

              Place the basket back into the air fryer and cook for an extra 3-5 minutes, or until the cheese has melted and is bubbly.

                Gently take the cheesy sweet potato wedges out of the air fryer and move them to a serving platter.

                  Finish by garnishing with freshly chopped parsley just before serving.
