Crispy Baked Shrimp Egg Rolls

Ingredients
  

1 lb (450g) shrimp, peeled and deveined

1 cup shredded cabbage

1 cup shredded carrots

1/2 cup scallions, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon rice vinegar

Salt and pepper to taste

12 egg roll wrappers

Olive oil spray or cooking spray

Sweet chili sauce (for serving)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare Shrimp Filling:

      - In a medium bowl, combine the shrimp, shredded cabbage, shredded carrots, chopped scallions, minced garlic, and grated ginger.

        - Add the soy sauce, sesame oil, rice vinegar, salt, and pepper. Mix well to ensure all ingredients are evenly coated.

          Assemble Egg Rolls:

            - Lay an egg roll wrapper on a clean, dry surface with a corner pointing towards you (like a diamond).

              - Place about 2 tablespoons of the shrimp filling near the bottom corner of the wrapper.

                - Fold the bottom corner over the filling, then fold in the sides and roll tightly away from you to form a log shape. Use a little water to seal the edges if necessary.

                  - Repeat the process with the remaining wrappers and filling.

                    Bake the Egg Rolls:

                      - Place the egg rolls seam-side down on the prepared baking sheet. Spray the tops lightly with olive oil spray to help them get crispy.

                        - Bake in the preheated oven for 20-25 minutes, turning halfway through, until golden brown and crispy.

                          Serve: Remove the crispy shrimp egg rolls from the oven and let them cool for a minute. Serve warm with sweet chili sauce for dipping.
