Crockpot Goulash

1 lb ground beef (or ground turkey for a lighter option)

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

2 cans (15 oz each) diced tomatoes (with juice)

1 can (8 oz) tomato sauce

2 cups beef broth

1 tablespoon Worcestershire sauce

2 teaspoons dried oregano

1 teaspoon dried basil

1 teaspoon paprika

Salt and pepper, to taste

1 cup elbow macaroni (uncooked)

1 cup shredded cheddar cheese (optional, for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Beef: In a skillet over medium heat, brown the ground beef until cooked through, breaking it into crumbles. Drain excess fat and transfer to the crockpot.

    Sauté Veggies: In the same skillet, add a touch of olive oil, then sauté the diced onion, garlic, and bell pepper until softened, about 5 minutes. Add to the crockpot.

      Combine Ingredients: To the crockpot, add canned diced tomatoes (with juice), tomato sauce, beef broth, Worcestershire sauce, oregano, basil, paprika, salt, and pepper. Stir well to combine all ingredients.

        Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours. If using a longer cook time, you could add a little more broth to maintain moisture.

          Add Macaroni: In the last 30 minutes of cooking, stir in uncooked elbow macaroni. Cover and continue to cook until pasta is tender.

            Serve: Once cooked, serve hot in bowls topped with shredded cheddar cheese and a sprinkle of fresh parsley for garnish.
