1.5 lbs boneless, skinless chicken thighs

1 cup BBQ sauce (store-bought or homemade)

1 tbsp olive oil

1 tsp smoked paprika

1 tsp garlic powder

Salt and pepper to taste

2 medium sweet potatoes, peeled and diced into 1-inch cubes

2 tbsp olive oil

1 tsp cumin

1 tsp chili powder

2 cups cooked brown rice or quinoa

1 avocado, sliced

½ cup fresh cilantro, chopped

Marinate the Chicken: In a large bowl, combine the chicken thighs, BBQ sauce, olive oil, smoked paprika, garlic powder, salt, and pepper. Mix until the chicken is evenly coated. Cover and let marinate in the fridge for at least 30 minutes, or up to 2 hours for deeper flavor.
