Ingredients

1 lb (450g) beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

8 oz (225g) mushrooms, sliced

1 teaspoon paprika

1 teaspoon Worcestershire sauce

1 cup beef broth

1 cup sour cream

Salt and pepper, to taste

12 oz (340g) egg noodles

Fresh parsley, chopped (for garnish)

Instructions

Cook the Egg Noodles: Begin by boiling a large pot of salted water. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

Sauté the Beef: In a large skillet or pan, heat olive oil over medium-high heat. Add the sliced beef sirloin in batches (if necessary) and sauté until browned, about 3-4 minutes. Remove the beef from the pan and set aside.

Cook the Vegetables: In the same skillet, lower the heat to medium and add the chopped onion and minced garlic. Sauté until the onion is translucent, around 2-3 minutes. Add the sliced mushrooms and cook until they're browned and tender, about 5 minutes.

Add Flavor: Sprinkle the paprika over the vegetable mix, then add the Worcestershire sauce, stirring well to combine. Pour in the beef broth, scraping the bottom of the pan to deglaze and incorporate all the flavors.

Combine Ingredients: Return the beef to the skillet, stirring everything together. Reduce heat to low and let it simmer for about 5 minutes, allowing the flavors to meld.

Finish with Sour Cream: Remove the skillet from heat and stir in the sour cream until fully incorporated. Season with salt and pepper to taste. If the sauce is too thick, you can add a bit more beef broth to reach your desired consistency.

Serve: Serve the beef stroganoff over the cooked egg noodles, garnishing with fresh chopped parsley for a pop of color and flavor.
