1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 small zucchini, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper, to taste

8 small corn or flour tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Avocado slices (optional)

Sour cream or Greek yogurt (optional)

Instructions
 

Sauté the Veggies: In a large skillet, heat olive oil over medium heat. Add the chopped red onion and minced garlic, stirring until fragrant (about 2 minutes).

    Add the Vegetables: Stir in the diced bell pepper and zucchini. Cook for about 5-7 minutes, until the peppers are slightly softened and the zucchini is tender.

      Mix in Beans and Corn: Add the black beans and corn to the skillet. Sprinkle with cumin, chili powder, salt, and pepper. Stir everything together and cook for another 3-4 minutes until heated through. Remove from heat.

        Warm the Tortillas: In a separate skillet or directly over the flame, warm the tortillas for about 30 seconds on each side or until they are pliable.
