2 medium zucchinis (about 1 lb), grated

1 teaspoon salt (for draining zucchini)

1/2 cup all-purpose flour

1/4 cup cornmeal

1/2 teaspoon baking powder

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 large egg

1/2 cup grated Parmesan cheese

1/4 cup chopped fresh parsley (or cilantro)

Vegetable oil (for frying)

Prepare the Zucchini: Start by grating the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel, sprinkle with salt, and let it sit for about 10-15 minutes. This will help draw out excess moisture.

    Squeeze Out the Water: After 15 minutes, twist the towel to wring out as much water as possible from the zucchini. This step is crucial for achieving crispy fritters.

      Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, black pepper, garlic powder, and onion powder. Whisk together until well incorporated.

        Add Wet Ingredients: Add the wrung-out zucchini, egg, Parmesan cheese, and chopped parsley to the dry mixture. Stir until everything is evenly combined to form a thick batter.

          Fry the Fritters: In a large skillet, heat about 1/4 inch of vegetable oil over medium heat. Once the oil is hot (you can test it by dropping a tiny bit of batter in; it should sizzle), scoop about 2 tablespoons of batter per fritter and drop it into the oil.
