Golden Fried Zucchini Chips

2 medium zucchinis

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

1 cup panko breadcrumbs

Vegetable oil (for frying)

Optional: Grated Parmesan cheese and chopped fresh herbs for garnish

Instructions
 

Prepare the Zucchini: Wash and dry the zucchinis. Slice them into thin rounds, about 1/8 inch thick. Place the sliced zucchinis on a paper towel and sprinkle a little salt over them. Let them sit for about 15 minutes to draw out moisture. Pat them dry with another paper towel.

    Set Up the Breading Station: In a shallow bowl, combine the all-purpose flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. In a second bowl, whisk the eggs until frothy. In a third bowl, place the panko breadcrumbs.

      Bread the Zucchini Chips: Dredge each zucchini slice in the seasoned flour, shaking off the excess, then dip it into the beaten eggs, letting any excess drip off. Finally, coat the slice in panko breadcrumbs, pressing gently to ensure the crumbs adhere well. Repeat until all the slices are breaded.

        Heat the Oil: In a large skillet or deep frying pan, pour enough vegetable oil to cover the bottom by about 1/2 inch. Heat the oil over medium-high heat until it reaches 350°F (175°C). You can check if it’s ready by dropping a couple of breadcrumbs in; they should sizzle immediately.

          Fry the Zucchini Chips: Carefully add the breaded zucchini slices in small batches to the hot oil, frying them for about 2-3 minutes on each side or until golden brown and crispy. Avoid overcrowding the pan, as this lowers the oil temperature.

            Drain and Serve: Once fried, transfer the zucchini chips to a plate lined with paper towels to absorb excess oil. If desired, sprinkle with grated Parmesan cheese and fresh herbs for an extra flavor boost. Serve warm with your favorite dipping sauce.
