Hearty Turkey Meatball and Spinach Soup

1 pound ground turkey

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)

1 teaspoon onion powder

Salt and pepper, to taste

For the Soup:

1 tablespoon olive oil

1 medium onion, diced

2 carrots, diced

2 celery stalks, diced

3 garlic cloves, minced

6 cups chicken or vegetable broth

1 can (14.5 oz) diced tomatoes, undrained

1 teaspoon dried thyme

1 teaspoon oregano

4 cups fresh spinach

Juice of 1/2 lemon

Salt and pepper, to taste

Optional: Crusty bread for serving

Instructions
 

Make the Meatballs:

    - In a large mixing bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, minced garlic, parsley, onion powder, salt, and pepper.

      - Mix until just combined. Avoid over-mixing to keep meatballs tender.

        - Form the mixture into small meatballs, about 1 inch in diameter, and place them on a baking tray.

          Brown the Meatballs:

            - In a large pot over medium heat, add a splash of olive oil. Once hot, add the meatballs in batches, being careful not to overcrowd. Brown on all sides for about 5 minutes. Remove the meatballs and set aside.

              Prepare the Soup Base:

                - In the same pot, add an additional tablespoon of olive oil if needed. Add diced onion, carrots, and celery, sautéing until the vegetables are tender (about 5-7 minutes).

                  - Stir in the minced garlic for an additional minute until fragrant.

                    Combine Ingredients:

                      - Pour in the broth and add the canned tomatoes (with their juice), thyme, and oregano. Bring to a simmer.

                        Add Meatballs and Spinach:

                          - Gently place the browned meatballs back into the pot. Simmer for 10-15 minutes, allowing the meatballs to cook through and the flavors to meld.

                            - Add the fresh spinach and stir until wilted. Season the soup with lemon juice, salt, and pepper to taste.

                              Serve:

                                - Ladle the soup into bowls and, if desired, serve with crusty bread on the side for dipping.
