Herb Butter Roasted Turkey Breast

1 (4-5 pound) bone-in turkey breast, skin on

1/2 cup unsalted butter, softened

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

2 tablespoons fresh sage, finely chopped

4 cloves garlic, minced

Zest of 1 lemon

1 tablespoon lemon juice

Salt and freshly ground black pepper, to taste

1 cup low-sodium chicken broth

Fresh herbs, for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Herb Butter: In a medium mixing bowl, combine the softened butter, rosemary, thyme, sage, garlic, lemon zest, lemon juice, salt, and pepper. Mix until well combined.

      Prepare the Turkey: Pat the turkey breast dry with paper towels. Use your fingers to carefully separate the skin from the breast meat without tearing it. This will create a pocket for the herb butter.

        Spread the Herb Butter: Take about half of the herb butter mixture and spread it evenly under the skin of the turkey breast, massaging it gently to distribute it. Spread any remaining butter over the skin of the turkey.

          Season the Turkey: Season the exterior of the turkey breast generously with salt and pepper.

            Transfer to Baking Dish: Place the turkey breast skin-side up in a roasting pan. Pour the chicken broth into the pan to keep the turkey moist during roasting.

              Roasting: Bake in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (75°C) in the thickest part of the breast. Baste the turkey every 30 minutes with the pan juices.

                Rest the Turkey: Once cooked, remove the turkey from the oven and tent it loosely with aluminum foil. Let it rest for at least 15-20 minutes before slicing, allowing the juices to redistribute.
