Herb Roasted Garlic Mashed Cauliflower

1 large head of cauliflower, cut into florets

1 head of garlic

2 tablespoons olive oil

2 tablespoons unsalted butter

½ cup cream cheese, softened

½ cup chicken or vegetable broth (low sodium)

Salt and pepper, to taste

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh chives, finely chopped

1 tablespoon fresh thyme leaves

Juice of ½ lemon

Zest of 1 lemon (optional)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves, drizzle with 1 tablespoon of olive oil, and wrap in aluminum foil. Roast in the oven for 30-35 minutes, until the cloves are soft and caramelized.

    Prepare the Cauliflower: While the garlic is roasting, bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 10-12 minutes, or until tender when pierced with a fork. Drain well and set aside.

      Combine Ingredients: In a large mixing bowl, add the drained cauliflower, roasted garlic (squeeze out the soft cloves), butter, cream cheese, chicken or vegetable broth, and the remaining 1 tablespoon of olive oil.

        Mash and Mix: Use a potato masher or an immersion blender to mash and blend the cauliflower mixture until smooth and creamy. Adjust the consistency with more broth if necessary.

          Season and Flavor: Stir in salt, pepper, fresh parsley, chives, thyme, lemon juice, and lemon zest if using. Taste and adjust seasoning as desired.

            Serve: Transfer the mashed cauliflower to a serving bowl. Drizzle with a little more olive oil and garnish with additional fresh herbs, if desired. Enjoy warm!
