2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon onion powder

1 teaspoon paprika

1 tablespoon fresh parsley, chopped (for garnish)

1 cup long-grain rice (such as Basmati or Jasmine)

2 cups chicken broth or water

1 tablespoon butter

1/2 teaspoon salt

For the Vegetables:

1 cup broccoli florets

1 medium carrot, thinly sliced

1/2 bell pepper, sliced (any color)

1 tablespoon soy sauce

1 teaspoon sesame oil

Optional Toppings:

Sliced green onions

Sesame seeds

Sriracha or your favorite hot sauce

Instructions
 

Cook the Rice:

    - Rinse the rice under cold water until the water runs clear.

      - In a medium saucepan, combine the rinsed rice, chicken broth (or water), butter, and salt.

        - Bring to a boil, then reduce to low heat, cover, and simmer for about 15-18 minutes until the rice is cooked and the liquid is absorbed. Fluff with a fork and set aside.

          Prepare the Chicken:

            - While the rice is cooking, season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.

              - Heat olive oil in a large skillet over medium-high heat.
