1 cup raw pumpkin seeds (pepitas)

2 tablespoons honey

1 tablespoon olive oil

1/2 teaspoon sea salt

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/4 teaspoon vanilla extract

A pinch of cayenne pepper (optional for a kick)

Preheat the Oven: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper to prevent the seeds from sticking.

    Prepare the Pumpkin Seeds: If using fresh pumpkin seeds, rinse them under cold water to remove the pulp. Pat them dry with a clean towel. If you’re using store-bought seeds, you can skip this step.

      Combine Ingredients: In a mixing bowl, combine the pumpkin seeds, honey, olive oil, sea salt, ground cinnamon, nutmeg (if using), vanilla extract, and cayenne pepper (if you want a spicy contrast). Stir until the seeds are evenly coated.

        Spread on Baking Sheet: Spread the coated pumpkin seeds in a single layer on the prepared baking sheet. Make sure they are not overcrowded to ensure even roasting.

          Roast the Seeds: Place the baking sheet in the preheated oven and roast the seeds for about 20-25 minutes, stirring the seeds every 10 minutes to ensure they cook evenly. Keep an eye on them to prevent burning – you want them golden brown and crunchy.
