4 large flour tortillas

1 cup cooked turkey breast, shredded

1 ½ cups shredded cheddar cheese

½ cup cream cheese, softened

½ cup diced bell peppers (red and green for color)

½ cup corn (canned or frozen)

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon olive oil

½ teaspoon cumin (optional)

Salt and pepper to taste

Salsa and sour cream for serving (optional)

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the shredded turkey, cheddar cheese, cream cheese, diced bell peppers, corn, garlic powder, onion powder, cumin (if using), salt, and pepper. Mix well until all ingredients are evenly combined and the filling is creamy.

    Heat the Pan: In a large skillet, heat 1 tablespoon of olive oil over medium heat.

      Assemble the Quesadillas: Place one flour tortilla in the skillet. On half of the tortilla, spoon a generous amount of the turkey and cheese filling. Sprinkle a little extra cheese on top for gooeyness, then fold the tortilla over the filling.

        Cook Until Golden: Cook the quesadilla for about 3-4 minutes on one side or until it’s golden brown and crispy. Carefully flip it over and cook the other side for an additional 3-4 minutes until the cheese is melted and the tortilla is crispy.

          Repeat: Remove the cooked quesadilla from the skillet and let it sit for a minute before cutting it into wedges. Repeat the process for the remaining tortillas and filling.

            Serve: Serve the quesadillas warm with salsa and sour cream on the side for dipping.
