2 cups cooked chicken, shredded or diced

1 cup long-grain white rice, uncooked

2 ½ cups chicken broth

1 cup frozen mixed vegetables (peas, carrots, corn)

1 cup sharp cheddar cheese, shredded (plus extra for topping)

1 cup cream of chicken soup

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

½ teaspoon salt (to taste)

¼ teaspoon black pepper (to taste)

1 tablespoon olive oil or unsalted butter

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Prepare the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch casserole dish with olive oil or butter.

    Cook the Rice: In a first saucepan, combine the uncooked rice and chicken broth. Bring to a boil over medium-high heat. Once boiling, reduce to a simmer, cover, and cook for 15-18 minutes or until the rice is tender and all the liquid has been absorbed.

      Mix Ingredients: In a large mixing bowl, combine the shredded chicken, cooked rice (once cooled slightly), frozen mixed vegetables, cream of chicken soup, garlic powder, onion powder, paprika, salt, and black pepper. Mix well until all ingredients are evenly coated.

        Add Cheese: Fold in the shredded cheddar cheese into the mixture, reserving about ½ cup for topping later.

          Transfer to Casserole Dish: Pour the chicken and rice mixture into the prepared casserole dish, spreading it out evenly.

            Top with Cheese: Sprinkle the reserved cheddar cheese evenly over the top of the casserole.

              Bake: Place in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly, and the edges are lightly golden.

                Garnish and Serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley if desired, then serve warm.
