1 ½ cups graham cracker crumbs

⅓ cup brown sugar

⅓ cup unsalted butter, melted

16 oz cream cheese, softened

½ cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 tsp maple extract

½ cup sour cream

For the pecan topping:

1 cup pecans, chopped

¾ cup maple syrup

¼ cup brown sugar

2 tbsp unsalted butter

1 tsp vanilla extract

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, combine graham cracker crumbs, brown sugar, and melted butter. Mix until well combined.

        - Press the mixture firmly into the bottom of a greased 9x9-inch baking pan. Bake for 8-10 minutes, until lightly golden. Let cool.

          Make the Cheesecake Layer:

            - In a large mixing bowl, beat the softened cream cheese with granulated sugar until smooth and creamy using an electric mixer.

              - Add eggs one at a time, mixing well after each addition. Then, mix in vanilla and maple extracts followed by sour cream. Mix until fully combined and smooth.

                - Pour the cheesecake mixture over the cooled crust, spreading it evenly.

                  Bake the Cheesecake Layer:

                    - Bake the cheesecake for 25-30 minutes, or until the edges are set, and the center looks slightly jiggly. It will firm up as it cools.

                      - Once done, let cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours until fully chilled.

                        Prepare the Pecan Topping:

                          - In a small saucepan, combine chopped pecans, maple syrup, brown sugar, butter, and vanilla extract over low heat. Stir until the mixture comes to a gentle simmer and the sugar dissolves, about 4-5 minutes. Remove from heat.

                            Assemble the Bars:

                              - Pour the pecan topping over the chilled cheesecake layer, spreading it evenly.

                                - Return the pan to the refrigerator for another hour to set the pecan topping.
