One-Pan Cheesy Beef and Rice Casserole

1 lb (450g) ground beef

1 cup uncooked long-grain rice

1 can (15 oz) diced tomatoes, undrained

1 can (15 oz) kidney beans, drained and rinsed

2 cups beef broth

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon chili powder

½ teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

1 cup frozen corn (optional)

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Brown the Beef: In a large skillet or saucepan over medium heat, add the ground beef. Cook until it is browned, breaking it apart with a spatula as it cooks. Drain any excess fat.

    Sauté Vegetables: Add the diced onion and minced garlic to the skillet. Sauté until the onion becomes translucent, about 3-4 minutes.

      Combine Ingredients: Stir in the uncooked rice, diced tomatoes (with juice), kidney beans, beef broth, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Mix until well combined.

        Bring to a Boil: Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to low and cover the skillet. Let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed most of the liquid. If using, stir in the frozen corn during the last 5 minutes of cooking.

          Add Cheese: Once the rice is tender, remove the skillet from heat and sprinkle the shredded cheddar cheese evenly on top. Cover the skillet again for a few minutes to allow the cheese to melt.

            Garnish & Serve: After the cheese has melted, fluff the rice with a fork and sprinkle with fresh cilantro or parsley if desired. Serve hot and enjoy your one-pan wonder!
