4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, diced

1 cup cherry tomatoes, halved

4 cups fresh spinach

1 cup heavy cream

1 teaspoon Italian seasoning

½ cup grated Parmesan cheese

1 tablespoon lemon juice

Fresh basil, for garnish (optional)

Instructions
 

Prep the Chicken: Season both sides of the chicken breasts with salt and pepper.

    Sear the Chicken: In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, add the diced onion and cook for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Add the Tomatoes: Add the cherry tomatoes to the skillet, stirring occasionally until they begin to soften, about 3 minutes.

          Incorporate the Spinach: Toss in the fresh spinach and stir until wilted, about 2-3 minutes.

            Create the Sauce: Lower the heat to medium-low. Pour in the heavy cream, then add Italian seasoning, Parmesan cheese, and lemon juice. Stir to combine and let simmer for a couple of minutes until the sauce thickens slightly.

              Return the Chicken: Add the seared chicken breasts back into the skillet. Spoon some of the creamy sauce over the chicken. Let everything simmer together for another 3-5 minutes.

                Serve: Garnish with fresh basil, if desired. Serve hot with crusty bread, over rice, or pasta for a complete meal.
