4 (6 oz) salmon fillets, skin-on

2 tablespoons olive oil

4 cloves garlic, minced

2 lemons (1 for juice, 1 sliced)

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 bell pepper (red or yellow), sliced

1 cup zucchini, chopped

1 cup asparagus, cut into 2-inch pieces

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small bowl, combine 3 tablespoons of olive oil, minced garlic, juice of 1 lemon, dried oregano, dried thyme, salt, and pepper. Whisk until well mixed.

      Marinate the Salmon: Place the salmon fillets in a large bowl. Pour half of the marinade over the salmon, coating them evenly. Let them marinate for about 10-15 minutes while you prepare the veggies.

        Prepare the Veggies: On a large, rimmed baking sheet, arrange the cherry tomatoes, bell pepper, zucchini, and asparagus. Drizzle with the remaining marinade and toss to coat evenly.

          Assemble the Dish: Create space on the baking sheet, and place the marinated salmon fillets skin-side down among the vegetables. Top each fillet with a lemon slice.
