One-Pan Lemon Garlic Shrimp and Quinoa

1 lb (450g) large shrimp, peeled and deveined

1 cup quinoa, rinsed

2 cups vegetable or chicken broth

3 tablespoons olive oil

4 cloves garlic, minced

Juice and zest of 1 large lemon

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and freshly cracked black pepper, to taste

1 cup cherry tomatoes, halved

2 cups baby spinach

Fresh parsley, chopped for garnish

Lemon wedges, for serving

Instructions
 

Prepare the Shrimp: In a medium bowl, toss the peeled shrimp with lemon zest, lemon juice, smoked paprika, oregano, salt, and pepper. Set aside to marinate for about 10 minutes.

    Cook the Quinoa: In a large skillet or pan over medium heat, add 1 tablespoon of olive oil. Once hot, add rinsed quinoa and toast for about 2 minutes, stirring frequently until fragrant.

      Add Broth: Pour in the vegetable or chicken broth, bring to a boil, then reduce the heat to low. Cover and simmer for about 15-20 minutes or until the quinoa has absorbed all the liquid and is fluffy. Remove from heat and fluff the quinoa with a fork.

        Sauté Garlic: In the same skillet, push the quinoa to one side and add the remaining 2 tablespoons of olive oil to the other side. Add minced garlic and sauté for 30 seconds until fragrant.

          Cook the Shrimp: Add the marinated shrimp to the pan. Cook for about 2-3 minutes on each side until pink and opaque.

            Combine Ingredients: Once the shrimp is fully cooked, add halved cherry tomatoes and baby spinach to the pan. Stir everything together and cook for an additional 2 minutes until the spinach wilts and tomatoes are slightly softened.

              Garnish and Serve: Remove the pan from heat. Taste and adjust seasoning if necessary. Serve the dish warm, garnished with fresh parsley and lemon wedges on the side.
