Ingredients

4 salmon fillets (about 6 oz each)

1 bunch of fresh asparagus, trimmed

3 tablespoons olive oil

Zest and juice of 1 large lemon

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Lemon slices (for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prep the Asparagus: On a large, rimmed baking sheet, arrange the trimmed asparagus in a single layer. Drizzle with 2 tablespoons of olive oil, and season with salt and pepper. Toss to coat well.

Prepare the Lemon Herb Mixture: In a small bowl, combine the lemon zest, lemon juice, minced garlic, dried oregano, dried thyme, and the remaining 1 tablespoon of olive oil. Stir until well blended.

Season the Salmon: Place the salmon fillets on the baking sheet, nestling them among the asparagus. Pour the lemon herb mixture over the salmon, ensuring each fillet is well coated. Season the salmon with additional salt and pepper.

Bake: Place the baking sheet in the preheated oven and bake for about 15-20 minutes, or until the salmon flakes easily with a fork and the asparagus is tender-crisp. Baking time may vary slightly based on the thickness of the salmon fillets.

Garnish and Serve: Once cooked, remove from the oven, and garnish with fresh lemon slices and chopped parsley. Serve immediately for a vibrant, nutritious meal.
