1 lb chicken tenders

1 cup pumpkin puree

1/2 cup breadcrumbs (ideally panko for added crispness)

1/4 cup grated Parmesan cheese

1 tbsp pumpkin spice mixture

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

2 tbsp olive oil

1/4 cup honey or maple syrup (for drizzling)

Fresh parsley for garnish (optional)

Begin by preheating your oven to 400°F (200°C) and prepare a large baking sheet with parchment paper for hassle-free cleanup.

    In a mixing bowl, blend together the pumpkin puree, pumpkin spice mixture, garlic powder, onion powder, salt, and black pepper. Stir until the mixture is smooth and thoroughly combined.
