½ cup feta cheese, crumbled

¼ cup cherry tomatoes, halved

Prep the Ingredients: Start by washing and chopping the fresh spinach, halving the cherry tomatoes, and crumbling the feta cheese. Set aside.

    Beat the Eggs: In a mixing bowl, crack the eggs and add the milk (if using). Season with salt and pepper. Whisk until well combined and the mixture is slightly frothy.

      Sauté Vegetables: In a non-stick skillet, heat the olive oil or butter over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant. Then add the chopped spinach and cook for 1-2 minutes until wilted.
