4 flatbreads or naan

1 cup shredded cheddar cheese

1/2 cup red onion, thinly sliced

1/2 cup bell pepper, thinly sliced (any color)

1/4 cup fresh cilantro, chopped

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Olive oil for brushing

Salt and pepper to taste

Instructions

Prepare the Chicken: In a medium bowl, combine the shredded chicken with the BBQ sauce, garlic powder, smoked paprika, salt, and pepper. Mix well to ensure the chicken is evenly coated.

Preheat the Oven: Preheat your oven to 400°F (200°C).

Assemble the Flatbreads: Place the flatbreads on a baking sheet lined with parchment paper. Lightly brush each flatbread with olive oil. Spread an even layer of the BBQ chicken mixture over each flatbread.

Add Toppings: Sprinkle the shredded cheddar cheese evenly over the BBQ chicken on each flatbread. Top with the sliced red onion and bell pepper.

Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly and the edges of the flatbreads are golden brown.

Garnish: Remove from the oven and let cool for a minute. Sprinkle the chopped fresh cilantro over the top for a burst of freshness.

Serve: Slice the flatbreads into quarters and serve warm. Enjoy your delicious pulled BBQ chicken flatbreads!
