2 cups fresh pumpkin puree (or canned pumpkin)

1 cup heavy cream

1 cup whole milk

3/4 cup brown sugar, packed

1/2 cup granulated sugar

4 large eggs

1 tablespoon pure vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

Whipped cream (for serving, optional)

Toasted pumpkin seeds (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9-inch pie dish or individual ramekins.

    Combine Wet Ingredients: In a large mixing bowl, whisk together the fresh pumpkin puree, heavy cream, and whole milk until smooth.

      Add Sugars and Spices: Stir in the brown sugar, granulated sugar, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until everything is well incorporated and the mixture is creamy.

        Transfer to Dish: Pour the custard mixture into the prepared pie dish or evenly distribute it into the ramekins.

          Create a Water Bath: Place the dish or ramekins in a large baking pan. Fill the pan with hot water until it reaches halfway up the sides of the custard dish/ramekins. This helps the custard cook evenly and prevents it from cracking.

            Bake: Carefully place the baking pan in the preheated oven. Bake for 50-60 minutes, or until the custard is set around the edges but still slightly jiggly in the center. A toothpick inserted in the center should come out mostly clean.

              Cool and Chill: Remove the custard from the oven and the water bath. Let it cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours (or overnight) to allow it to fully set.

                Serve: Before serving, top with a dollop of whipped cream and sprinkle with toasted pumpkin seeds for added crunch, if desired.
