Ingredients

1 cup rolled oats

1/2 cup pumpkin puree

1/4 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup mini chocolate chips (optional)

1/2 cup chopped nuts (e.g., walnuts or pecans, optional)

2 tablespoons chia seeds or flax seeds (optional)

Instructions

Mix Ingredients: In a large mixing bowl, combine the rolled oats, pumpkin puree, almond butter, honey (or maple syrup), and vanilla extract. Stir until the mixture is well combined and sticky.

Add Spices: Sprinkle in the pumpkin pie spice, cinnamon, and salt. Mix well to ensure the spices are evenly distributed throughout the mixture.

Incorporate Add-Ins: If using, fold in the mini chocolate chips, chopped nuts, and chia or flax seeds for added texture and nutrition.

Chill the Mixture: Cover the bowl with plastic wrap or a lid and refrigerate for about 30 minutes. This will help the mixture solidify, making it easier to roll into bites.

Form the Bites: Once the mixture is chilled, use your hands to roll about a tablespoon of the mixture into small balls (approximately 1 inch in diameter). You should be able to make around 12-15 bites, depending on the size.

Store: Place the energy bites in an airtight container. They can be kept in the refrigerator for up to a week or frozen for longer storage.

Serve: Enjoy these delicious and nutritious energy bites as a quick snack or pre-workout boost!
