2 cups rolled oats

1 cup pumpkin seeds (pepitas)

1 cup chopped nuts (e.g., pecans, almonds, or walnuts)

1/2 cup unsweetened shredded coconut

1/2 cup maple syrup or honey

1/4 cup coconut oil, melted

1 cup pumpkin puree

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1 teaspoon ground ginger

1/2 teaspoon allspice

1/2 teaspoon salt

1 cup dried cranberries or raisins (for mixing in after baking)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper for easy cleanup.

    Mix the Wet Ingredients: In a large mixing bowl, combine the maple syrup (or honey), melted coconut oil, pumpkin puree, and vanilla extract. Whisk until smooth and well blended.

      Combine the Dry Ingredients: In another bowl, mix together the rolled oats, pumpkin seeds, chopped nuts, shredded coconut, ground cinnamon, nutmeg, ginger, allspice, and salt.

        Combine Both Mixtures: Pour the dry mixture into the wet mixture and stir until all the ingredients are evenly coated. The mixture should be sticky and clump together easily.

          Spread on Baking Sheet: Transfer the granola mixture to the prepared baking sheet. Use a spatula to spread it out evenly, pressing it down to form clusters.

            Bake the Granola: Bake in the preheated oven for about 25-30 minutes or until the granola is golden brown. Stir halfway through the baking time to promote even baking.

              Cool and Add Dried Fruits: Once done, remove the granola from the oven and let it cool completely on the baking sheet. As it cools, it will harden and form cluster shapes. Once cooled, mix in the dried cranberries or raisins.
