1 lb (450g) beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

8 oz (225g) mushrooms, sliced

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream

Salt and pepper to taste

12 oz (340g) egg noodles

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Noodles: In a large pot, bring salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Beef: In a large skillet, heat olive oil over medium-high heat. Add the thinly sliced beef and cook for 2-3 minutes until browned. Remove the beef from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the chopped onion and garlic. Sauté for about 2 minutes until the onion is translucent. Add the sliced mushrooms and cook for an additional 5 minutes until they soften.

        Make the Sauce: Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir to combine and bring to a simmer. Allow the mixture to cook for 5 minutes to reduce slightly.

          Combine Beef & Sauce: Reduce the heat to low, then add the cooked beef back into the skillet. Stir in the sour cream until well combined and heated through. Season with salt and pepper to taste.

            Toss with Noodles: Add the drained egg noodles into the skillet and gently toss to combine everything together. Ensure the noodles are well coated with the creamy beef sauce.

              Serve: Plate the stroganoff and garnish with chopped fresh parsley for a pop of color and freshness.
