Ingredients

For the Baked Salmon:

4 salmon fillets (about 6 oz each)

2 tablespoons olive oil

2 tablespoons honey

2 tablespoons Dijon mustard

2 cloves garlic, minced

Juice of 1 lemon

Salt and pepper to taste

Fresh dill or parsley for garnish (optional)

For the Sweet Potato Mash:

2 large sweet potatoes, peeled and cubed

1/4 cup milk (or plant-based milk for a dairy-free version)

2 tablespoons unsalted butter (or olive oil for a vegan option)

Salt and pepper to taste

A pinch of nutmeg (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Salmon: In a small bowl, whisk together the olive oil, honey, Dijon mustard, minced garlic, lemon juice, salt, and pepper. Place the salmon fillets on the prepared baking sheet and brush the mixture generously over each fillet.

Bake the Salmon: Bake in the preheated oven for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. (Cooking time may vary depending on the thickness of the fillets.)

Cook the Sweet Potatoes: In a pot, add the cubed sweet potatoes and cover with water. Bring to a boil and cook for about 15-20 minutes, or until the sweet potatoes are tender. Drain.

Mash the Sweet Potatoes: Return the drained sweet potatoes to the pot. Add the milk, butter (or olive oil), salt, pepper, and nutmeg (if using). Mash until smooth and creamy. Adjust seasoning as needed.

Serve: Plate each salmon fillet alongside a generous scoop of sweet potato mash. Garnish with fresh dill or parsley if desired. Enjoy your delightful and nutritious meal!
