Ingredients

1 lb ground beef (80% lean)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 medium onion, diced

2 cloves garlic, minced

1 cup beef broth

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

2 tablespoons olive oil

Optional toppings: sour cream, shredded cheese, chopped green onions, avocado

Instructions

Prepare Your Ingredients: Start by gathering all your ingredients and chopping the onion and garlic. Having everything ready will make the cooking process quicker.

Brown the Beef: In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned (about 5-7 minutes). Season with salt and pepper.

Sauté Aromatics: Once the beef is cooked, push it to the side of the pot and add the diced onion. Sauté for about 3 minutes until the onion is translucent. Add minced garlic and cook for an additional 30 seconds until fragrant.

Mix in Spices: Stir in the chili powder, cumin, smoked paprika, and cayenne pepper. Cook for about 1 minute, allowing the spices to toast slightly and enhance their flavor.

Add Beans and Tomatoes: Pour in the drained black beans, kidney beans, and the can of diced tomatoes with their juices. Stir everything together, ensuring the flavors meld.

Simmer: Add the beef broth to the pot. Bring the chili to a steady simmer, then reduce the heat to low and let it cook uncovered for about 10-15 minutes, stirring occasionally. This will allow the chili to thicken slightly.

Taste and Adjust: After simmering, taste the chili and adjust seasonings as necessary. You may want to add more salt or cayenne for extra heat.

Serve Hot: Ladle the chili into bowls and top with your favorite toppings like sour cream, shredded cheese, green onions, or avocado. Enjoy your delicious, quick chili!
