Ingredients

1 lb (450g) ground beef

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes, undrained

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

2 tbsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp cayenne pepper (optional for extra heat)

Salt and pepper to taste

2 cups beef broth

1 tbsp olive oil

1 ripe avocado, halved and pitted

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Heat the Oil: In a large pot or Dutch oven, heat the olive oil over medium heat.

Sauté the Vegetables: Add the chopped onion and bell pepper. Sauté until the vegetables are softened, about 4-5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

Brown the Beef: Increase the heat to medium-high and add the ground beef. Cook for about 5-7 minutes, breaking it apart with a spoon, until browned and fully cooked. Drain any excess fat if necessary.

Add Spices & Beans: Stir in chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Mix well to coat the beef and vegetables. Add the kidney beans, black beans, diced tomatoes (with their juices), and beef broth.

Simmer the Chili: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 15-20 minutes, allowing the flavors to meld together. Stir occasionally.

Prepare Avocado: While the chili simmers, slice the avocado into small cubes, and season with a pinch of salt and pepper.

Serve: Once the chili is done simmering, ladle it into bowls. Top with diced avocado and a sprinkle of fresh cilantro. Serve with lime wedges on the side for an extra kick.
