Quick Chicken Fajita Wraps with Salsa

2 boneless, skinless chicken breasts, thinly sliced

1 tablespoon olive oil

1 tablespoon taco seasoning (store-bought or homemade)

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

1 small onion, thinly sliced

Salt and pepper to taste

4 large flour tortillas (whole wheat or regular)

1 cup shredded lettuce

1 cup shredded cheese (cheddar or Mexican blend)

½ cup sour cream or Greek yogurt

Fresh salsa (store-bought or homemade) for serving

Lime wedges, for garnish

Fresh cilantro, for garnish (optional)

Instructions
 

Season the Chicken: In a large mixing bowl, combine the sliced chicken breasts and taco seasoning. Toss to ensure the chicken is well-coated.

    Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for about 5-6 minutes, stirring frequently, until the chicken is cooked through and golden brown.

      Add the Vegetables: Add the sliced bell peppers and onion to the skillet. Season with salt and pepper. Sauté for another 4-5 minutes, until the vegetables are tender but still slightly crisp.

        Warm the Tortillas: While the chicken and vegetables are cooking, warm the tortillas in a separate dry skillet over low heat for about 30 seconds on each side, or wrap them in foil and place in a preheated oven at 350°F (175°C) for about 5-7 minutes.

          Assemble the Wraps: Lay a warm tortilla flat and layer it with shredded lettuce, the chicken and vegetable mixture, cheese, and a dollop of sour cream. Spoon fresh salsa over the top and sprinkle with cilantro, if using.

            Wrap It Up: Fold the sides of the tortilla inward, then roll from the bottom to the top to create a tight wrap. Repeat with the remaining tortillas.

              Serve: Cut each wrap in half if desired, and serve with lime wedges and extra salsa on the side.
