12 oz penne pasta

1 lb ground turkey

1 small onion, diced

3 cloves garlic, minced

1 packet taco seasoning

1 (15 oz) can black beans, rinsed and drained

1 (15 oz) can diced tomatoes with green chilies

1 cup corn kernels (fresh or frozen)

1 ½ cups shredded cheddar cheese

1 cup sour cream

1 cup salsa

Fresh cilantro, for garnish (optional)

Salt and pepper to taste

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Cook Turkey: In a large skillet over medium heat, add the ground turkey, diced onion, and minced garlic. Cook until the turkey is browned and the onions are translucent, about 5-7 minutes.

        Add Flavors: Stir in the taco seasoning, black beans, diced tomatoes (with juices), corn, and a pinch of salt and pepper. Mix well and let simmer for about 5 minutes, allowing the flavors to meld together.

          Combine Ingredients: In a large mixing bowl, combine the cooked pasta, turkey mixture, sour cream, and 1 cup of shredded cheddar cheese. Stir gently until everything is well combined.

            Assemble Bake: Pour the pasta mixture into a greased 9x13 inch baking dish. Spread evenly.

              Top with Salsa: Drizzle the salsa over the top of the pasta, and sprinkle the remaining ½ cup of cheese on top.

                Bake: Cover the dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and slightly golden.

                  Serve: Once out of the oven, let it cool for a few minutes. Garnish with fresh cilantro if desired, and serve warm.
