1 large head of cauliflower, cut into florets

1 whole bulb of garlic

2 tablespoons olive oil

1/2 cup unsweetened almond milk (or any milk of your choice)

3 tablespoons unsalted butter (or vegan substitute)

Salt and pepper to taste

1/4 teaspoon nutmeg (optional)

Fresh chives or parsley for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Garlic: Cut the top off the garlic bulb to expose the cloves. Drizzle with 1 tablespoon of olive oil, wrap in aluminum foil, and place it in the oven. Roast for about 30-35 minutes, or until the cloves are soft and caramelized.

      Prepare the Cauliflower: While the garlic is roasting, bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 10-12 minutes, or until very tender.

        Drain and Dry: Once the cauliflower is cooked, drain it well and allow it to dry for a few minutes. This step is crucial for ensuring a non-watery mash.

          Combine Ingredients: In a large mixing bowl, combine the cooked cauliflower, roasted garlic (squeeze the cloves out of their skins), almond milk, butter, remaining olive oil, salt, pepper, and nutmeg (if using).

            Mash It Up: Use an immersion blender for a creamy texture, or a potato masher for a chunkier consistency, until you achieve your desired smoothness. Taste and adjust the seasoning if necessary.
