Savory Cheddar Potato Soup

4 medium russet potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup whole milk

1 cup sharp cheddar cheese, shredded

1/4 cup cream cheese, cubed

1/4 cup butter

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

4 strips of crispy bacon, crumbled (optional)

Fresh chives or green onions, chopped (for garnish)

Instructions
 

Sauté the Veggies: In a large pot, heat the olive oil and butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Cook the Potatoes: Add the diced potatoes to the pot. Pour in the vegetable broth and add the thyme and smoked paprika. Bring the mixture to a boil, then reduce to a simmer. Cook for about 15-20 minutes, or until the potatoes are tender.

      Blend the Base: Once the potatoes are soft, use an immersion blender to puree the soup until smooth. (If you don’t have an immersion blender, carefully transfer in batches to a blender.)

        Add Dairy: Return the blended mixture to low heat. Stir in the milk, cream cheese, and cheddar cheese. Mix well until the cheeses are melted and the soup is creamy. Adjust the consistency by adding more broth or milk if it’s too thick.

          Season: Taste the soup and season with salt and pepper as needed.

            Serve: Ladle the soup into bowls. Top with crumbled bacon (if using) and garnish with chopped chives or green onions. Optionally, sprinkle additional cheese on top for an extra cheesy finish.
